Skirt Steaks

This old favorite, also known as Romanian Tenderloin, is easy to prepare broiled, marinated and grilled or pan sautéed.  Great for fajitas or a quick sandwich!

Suggested Preparation: Grilled with Chimichurri Sauce

  1. Combine the following ingredients in a food processor until smooth:
      • 1/2 cup packed fresh parsley leaves
      • 1/2 cup packed fresh basil leaves
      • 1/4 cup packed fresh cilantro leaves
      • 1/4 cup extra-virgin olive oil
      • 2 garlic cloves, finely minced
      • 2 teaspoons white wine vinegar
      • 1 tablespoon lime juice
      • 1/2 teaspoon ground coriander
      • 1/2 teaspoon ground cumin
      • 1/2 teaspoon salt
      • 1/8 teaspoon freshly ground black pepper
2. Heat grill to medium-high.
3. Lightly coat skirt steak with olive oil and season with salt and pepper.
4. Grill 4-6 minutes per side on each side for medium-rare.
